I am thinking of trying to do a little post called "What's For Dinner" of the meal I ate that day. This is going to be a challenge for me to post more often then I do. The way I was thinking of doing this is just posting the meal with a pic and a short description of how I made it, not a full recipe. I will still post full recipes when I get to, but this way I will have more to show everyone. If I make a repeat meal, (cause I do tend to eat my favorite foods every few weeks when I get on a kick) I will not be showing you the same meal multiple times.

Monday, December 6th
My second try with the black bean spaghetti- with salsa, roasted corn, and guacamole.
I made the roasted corn from a frozen bag tossed with salt, pepper, and oil. I love Newman's Own mild or medium salsa. And I made the guacamole by mashing an avocado with lemon juice (fresh) and pepper. Yummy
Tuesday, December 7th
Pear, Cranberry, and Pecan Salad- spinach, toasted pecans, apple juice sweetened dried cranberrys by Eden, a D'anjou pear and jicama, with Annie's Natural Gingerly dressing. Yummy
Tomorrow I will be attempting to make bread pudding (vegan of course)! I cannot wait. Until then...
this is a really cute idea.. i wish i had the energy/patience to cook actual meals for myself but i'm usually content to just eat pasta. maybe your blog will inspire me!
